Is there a way to call the built in Codea color chooser from my code? I know I can set a color parameter and access it from the view window, but my application won’t be running with that window visible.

No, you can’t. However, a few people have written colour pickers that you might be able to integrate into your code.
Gah! I’ve spent the day reverse engineering the built in one and about half way there. But…it seems to have performance issues. What’s the reason for not making the built-in one available?
The reason is they haven’t got round to it, amongst other things I’m certain this was put on the list
